Expired F-1 and embassy in my country is not processing visas. Any way around this?

Im from Brazil. And I’m currently on an F-1 visa. I am currently in US but hoping to go home for the holidays. However I’m afraid I’m not gonna be able to come back. I know about the travel ban and I’m fine spending 14 days in Mexico before coming back. But my problem is that my F-1 visa is about to expire (expires before I come back) and the embassy in Brazil still hasn’t resumed routine visa services and has no prediction of when that’s gonna happen. Is there any way around this. I have a valid B1/B2 visa but from my understanding I cannot use that to come back even if all my classes are online. Unless there is some sort of exception I’m missing. Can I renew my visa in another country? Are there any countries Brazilians are allowed to enter where the embassy is processing visas?
