Former worker wants me to provide her a reference letter as part of her application for permanent residency

Okay so to begin with I am not familiar at all with US immigration law. I am a supervisor at a mom and pop business and had an immigrant working under me a while back. I was not privy to her immigration status and I know she was paid via direct deposit although but I don't know whether she was classified as a contractor or employee. The type of work was unskilled warehousing.

She worked for several years and left the job about 2 years ago and recently reached out to me to request a reference letter as part of her application for permanent residency(?). Her English is not great and was not very clear about the process.

I'd like to help her out but am confused, because my understanding is that if she is not already a resident, then shouldn't she not have been authorized to work? Wouldn't I basically be outing her if I were to provide a reference?

To avoid delays, an additional Affidavit of Support Form I-864 for a joint sponsor may be submitted." We already have a petitioner and a household sponsor (the household sponsor's income is above the required level), but still unsure why we received this. Has anyone else received this message? All of our documents say "Approved" on NVC. Does this mean we have to find another sponsor? Can we show the consular officer our ...
