Considering moving to Europe from USA

My fiance and I (both trans men, I'm 24 and he's 23) have been considering moving to Europe, probably an English speaking country as I have difficulty speaking new languages (I can understand things okay when I read and writing takes some time, but something in my brain just stops when I hear people speaking and have to translate in my head in real time.) I was thinking Ireland or somewhere in that neck of the woods, because both of our families are pretty Irish in descent, but I'm wondering how the medical system is there, as we suspect he's disabled. In addition, he also has Celiac's, which means no wheat, barley, or rye for him. I'm wondering where would be the best for us to move but not sure where to look, so I'm starting here.
