What’s next step should I take to stop the OPT unemployment countdown?

I recently accepted a software engineering position at a nonprofit company called Greensand and am in the process of receiving an offer letter. However, I have about 2-weeks left of OPT unemployment left. Apart from updating my SEVIS with employer information, What's the next step I should take to stop the OPT unemployment countdown? Should I request an employment verification from my employer?
