First time using AP/EAD, need advice

Me and my wife are travelling to India(Jan-March) and since the appointment availability for vqisa stamping is very limited. we are looking to enter USA with EAD/AP when we come back.

We both are currently on H1B status expiring in May and August next year. Our understanding is that using AP should not be an issue for renntry and we could re-instate H1B as soon as we enter by filing H1B extension. Are there any other risk we should be aware of?

Also in a scenario where if I(eligible for Dropbox) get visa stamp, can I enter on H1B and wife on AP? or as a primary applicant I also have to enter on AP with her?
